My (not so little) little brother was visiting last week and introduced me to one of his favorite breakfasts/snacks. He follows the Paleo eating principles and is very healthy and has become a bit of a foodie. While I am not sure I am ready to dive into the Paleo diet (as of yet), we did have some good discussions revolving around eating habits and what one should probably be eating. Once again, my view of healthy eating is ever evolving and changing the more information I glean from my reading and from other people. I feel like each piece of information I acquire is another piece in the puzzle. I will keep you posted on my journey, but in the mean-time I will share the recipe that my brother gave me (and I tweaked) for some delicious, crunchy, granola-type concoction that is grain free and is great for breakfast or as a snack.
Recipe adapted from Civilized Caveman Cooking
Ingredients:
1/2 c. raw pepitas
2 c. raw almonds, finely chopped
1/2 c. walnuts, chopped
1 1/3 c. unsweetened shredded coconut
3/4 c. almond meal
1/2 c. coconut oil
1/3 c. honey
1 tsp vanilla
Step One:
Heat oven to 325 degrees. Mix together pepitas, chopped almonds and walnuts, shredded coconut, and almond meal in a large bowl.
Step Two:
Heat coconut oil and honey in a small saucepan until coconut oil is melted. Add in vanilla.
Step Three:
Pour coconut oil, honey, and vanilla mixture over dry ingredients and stir until everything is evenly coated with the liquid. Pour mixture onto a large cookie sheet that has sides (if using a darker pan, make sure you monitor it carefully because it may cook faster). Bake the mixture for 10 minutes and then stir. Bake for about another 10 minutes, keeping an eye on it to make sure it doesn’t get too dark. It should be golden brown. Remove from oven and allow to completely cool before putting in a sealed container. Enjoy with a bit of milk poured over it! Yum!
