Grass-Fed Beef with Broccoli

Since I have lovely grass-fed beef steaks I have been hunting around for delicious recipes to put it to good use.  We didn’t eat much beef here before finding a good source for it so I didn’t have too many recipes in my repertoire so I had to do some searching.  I found this delicous recipe from a book I got from the library and did some tweaking.  The beef paired with broccoli is a wonderful combination and my hubby and I love having this for supper served over brown rice.  Yum!

Recipe adapted from Make it Paleo by Bill Staley and Hayley Mason

Serves about 4

Ingredients:

1 lb. beef, cut into cubes

3 tbsp sesame oil

5 cloves garlic, minced

1 medium onion

1/2-1 tsp ground ginger

4 c. broccoli florets

1/3 c. low sodium soy sauce

1 tsp red pepper flakes

Step One:

Heat oil in a large skillet over medium high heat.  Add in onion and saute until tender and then add in garlic and cook for 1-2 minutes.

Step Two:

Add beef to skillet, stirring often until browned on all sides.  Add in broccoli and continue to saute for 3-4 minutes.

Step Three:

To the skillet add in soy sauce, ginger and red pepper flakes and saute for another 2-3 minutes.  (Broccoli should be crisp tender so watch closely to make sure you don’t overcook it.)

Serve over brown rice, or if going Paleo, eat by itself.  (I have also garnished it on occasion with 2 tbsp of chopped green onions from my garden, which adds extra yumminess.)
