Happenings

Here is what has been happening this week at my house:

The peaches are in!  Over the weekend we went camping with my family, and my mom brought me four big boxes of fruity goodness. I have been working on preserving them in stages as them come ripe.

Frozen is my favorite way to preserve these golden orbs of deliciousness, but I am also working on drying some and made some peach sauce today (recipe to come!).  Check out my post on how to freeze peaches.

The tomatoes are just starting to ripen and the basil is very abundant so I whipped up a small batch of Roasted Tomato-Basil Sauce to use for pizza and spaghetti this week.  Since I now have a Vita-Mix, I pureed the sauce in there and was super happy to see that it got the sauce very smooth in comparison to my food processor that I used last year.
Sauce making will be in full swing come the middle of August, and I will be busy filling my pantry with this tasty stuff.

I made a couple of beautiful loaves of bread using my Homemade Bun recipe.  I divided the dough into two loaves and baked for 30 minutes.  I had not tried that recipe as just loaves of bread but let me tell you, it is delish!  Get the recipe here.

I have oodles of cucumbers to contend with, and I am trying something new this year: fermenting!  I got The Complete Idiot’s Guide to Fermenting Foods from the library and have been having fun with trying my hand at fermenting cucumbers into pickles as well as garlic-carrots.

So far the Garlic-Dill Pickles as well as the Garlic Sauerkraut that I made last week turned out very tasty so I am excited for the rest to finish their ferment.

Anything happening at your place this week?

Oh I just love that book! Let me know how your pickles turned out. I no longer have a garden and your post is making me so jealous….in a good way of course.
