I don’t own an ice cream maker and am not a big fan of buying ice cream but I love a good frozen treat. This “ice cream” is dairy-free, low sugar, and a delicious healthy snack. The bananas and strawberries whip up to a silky smooth consistency that surprised me. It really has the texture of ice cream. I can eat a whole bowl of it without a bit of guilt, which is good because, believe me, you will want to eat a whole bowl of this goodness once you try it.
Ingredients:
1 frozen ripe banana (I peeled my banana first, broke it into a few pieces, and then froze it.)
*Make sure your banana is not completely brown or super overripe because I have found they get a little bit of a bitter taste when frozen. A banana with a few brown spots is a perfect candidate.
1/4 c. frozen strawberries
1 tbsp honey
Step One:
Toss banana and strawberries in a food processor (I would venture to guess you could use a blender as well but my blender stinks so I use my food processor).
Step Two:
Pulse/process it until it is smooth and then add in the honey. Process for another 30 seconds or so to incorporate the honey.
That is it! So simple and so delicious. This makes about enough for a small bowl full and easily doubles or triples. I have plans to try other fruit in with the banana. I am thinking frozen peaches or raspberries would also be very tasty.
