The zucchini are in their second round here. There was a short reprieve and then they kicked it into high gear again. It is back to eating zucchini every day. But, strangly enough, we are not sick of it yet. It must be my commitment to transform it into something different each time we eat it. Last night we had delicious cheesy zucchini boats grilled up and served with fresh garden green beans and cucumbers. All produce grown here at the Green Bean Gardens. Fantastic! Do you want in on this deliciousness? Follow this recipe and you too can be enjoying one of our favorite zucchini meals.
Ingredients:
1 large zucchini (you need a zucchini that is about a foot long in order for it to hold anything)
1 small onion
1 clove garlic
1-2 tbsp olive oil
10 cherry tomatoes, quartered (or 1 medium tomato, chopped)
1 tbsp fresh chopped basil
1 tsp fresh thyme
2 oz. cream cheese
1 tbsp milk
1/4 c. grated Parmesan cheese
1/2 c. shredded Mozzarella cheese
Step One:
Cut your zucchini in half length-wise and scoop/cut out the inside, leaving about a 1/4 inch wall of zucchini. (I had a rather large zucchini so I also cut it in half the other way to to make it easier to handle.) This is the boat. Chop up everything that is scooped out of the inside of the zucchini.
Step Two:
In a large frying pan, heat up olive oil. Saute chopped insides of zucchini, onion, garlic, tomatoes, basil, and thyme until zucchini is tender but slighty crisp. It will cook a bit more on the grill. Stir in cream cheese, milk, and Parmesan and cook until cream cheese is fully melted and mixed in. Remove from heat.
Step Three:
Fill your zucchini hulls evenly with the sauteed mixture. Top with Mozzarella. Place the filled boat directly on the grill and grill for 10-15 minutes over medium heat until the cheese is melted and the hulls of the boats are tender when pierced with a fork.
Enjoy as main dish or as a side. It is great as a side dish along with grilled chicken or other meat, or it works as a vegetarian main dish, like we ate it last night.

Mmmmm. Looks delish. I love zucchini boats! We make them differently, with other vegetables and ham mixed in. This way looks really yummy, too!
